Application of NMN in food

NMN is widely found in natural foods and is found in vegetables, fungi, meat, and shrimp (see Table 1).

Ummarino et al. also found that NMN exists in human milk and donkey milk through a new enzyme coupling technology, and the content in human milk is higher.

The processing characteristics study found that NMN in water or milk, treated at 75 °C for 5 min, had stable activity;

after 5 min at 95 °C, the activity lost about 20%, which indicated that adding NMN to pasteurized milk was theoretically feasible.

Another oral experiment showed that NMN can be rapidly absorbed within 30 minutes after taking a lower concentration of NMN, effectively transported to the blood circulation, and immediately converted into NAD+ in the main metabolic tissues.

In addition, during the 12-month intervention period, NMN did not show any obvious toxicity and lethality, nor serious side effects, and had high food safety.

At present, Megumi of Japan has developed a food composition of NMN and resveratrol.

Resveratrol is a natural polyphenolic compound that acts as estrogen, has antioxidant, antibacterial, inhibiting tyrosinase activity, improves metabolic syndrome, and prolongs lifespan.

Experiments have proved that the food composition can reduce the content of total cholesterol in blood, reduce the incidence of myocardial infarction;

reduce the content of low-density lipoprotein;

reduce the content of uric acid and neutral fat such as triglyceride in blood.

Functional foods with NMN as the active ingredient have great potential for development, but there are few human experimental data on NMN, and the maximum tolerated dose and tolerance time in humans are rarely reported.

Therefore, the human safety of NMN still needs to be further explored.
